Last year we crowned lasagne with the title of Australia’s National Crisis Dish. The multi-layered masterpiece saw a real resurgence in restaurants around the country as lockdowns came into effect and comfort food became the order of the day.

So it makes sense that Brisbane's new lasagne drive-through service launched in April, following the announcement of another snap lockdown. Sure, the lockdown is over now, but who doesn't want convenient, accessible lasagne all year round?

The concept is by Jerome Dalton of Dalton Catering and CJ's Pasta (Dalton purchased the wholesale pasta brand in July last year) and it launched in early April.

Choose between beef, sand crab or vegetarian lasagne – all served with cheesy garlic focaccia. You can also order a salumi box with mortadella, salami, Italian bread and pickles. Just be sure to phone ahead on 0404 219 757; these silky, saucy slabs are likely to sell out pretty quick.

Thankfully, the concept will continue each Friday. And you can even purchase bottles of sparkling, white and red Italian wines and champagne as well.

The drive-through is located at 22 Prospect Street, Fortitude Valley and is open each Friday from 1pm until 6pm or until sold out. To receive hot "ready to eat" lasagne, pre-order on 0404 219 757. Without pre-order, the lasagnes will be sold chilled and "ready to heat" at home.
